Ginger Carrots

This simple snack is rich, rooty and full of vitamin A and antioxidants. It couldn’t be easier to prepare and will compliment seasonal meats like duck or game beautifully.
Ingredients:
5 cm piece of fresh ginger peeled
2 tablespoons of butter
3 carrots
15 baby carrots
Ginger Carrots

In the VillaWare® Juice Extractor, juice the ginger and 3 carrots, then set aside the juice.

Butter a 22 x 22 cm pyrex dish then add juice and baby carrots, seasoned with salt and pepper. Bake in the oven for 25 minutes at 175º C.
